For the apricot dumplings made from whole spelt flour, first prepare the dough: Mix the ingredients for the dough together and knead briefly. Then form a roll on a floured work surface, cut down about 10 pieces and press flat. Place an apricot in the center (instead of the pit, place a piece of sweetener) and form dumplings. Put them in boiling water and cook for about 25 minutes.
Heat canola oil in a pan, add the breadcrumbs and toast until brown – stirring frequently. Then roll the apricot dumplings in the toasted breadcrumbs.
Preparation Tip:
The apricot dumplings made from whole spelt flour go very well with apple compote.
