For the potato-pumpkin soup, wash and peel the pumpkin and potatoes. Remove the seeds from the pumpkin and cut the pumpkin and potatoes into bite-sized cubes.
Bring the vegetable soup to a boil and cook the pumpkin and potato cubes in it until al dente. Season the potato-pumpkin soup with salt and freshly ground pepper and sprinkle with parsley.
