For the spicy minced roast, fry onion in clarified butter until golden. Add parsley and let it foam up briefly.

Squeeze out the soaked bread and add to the minced meat with the parsley roasted onions. Knead thoroughly and season with salt, pepper and a little mustard.

Form into a loaf with a hollow. Cut the gherkins and carrots into quarters and place them in the hollow with the two boiled eggs.

Now roll up the whole mass and put it into a pan or Reindl with melted clarified butter.

Roast the minced meat for about 1 hour at 180 °C in the oven. Serve with mashed potatoes and tomato salad.

Preparation Tip:

The minced roast will have a nice, shiny brown color if it is basted with the gravy more often after about 1/2 hour of roasting. If there is more pork than beef in the mince, you will need an egg to bind it.
