For the apple-cinnamon pancakes, first prepare pancake batter.

Whisk flour, milk, mineral water, eggs, salt, baking powder and nutmeg to a pancake dough and let it swell for half an hour. Meanwhile, wash apples, remove core, quarter and cut into thin slices.
