For the pancakes, stir well flour with milk, egg, chives, parsley, dill tips and lemon thyme, season with salt, pepper and nutmeg. from the dough bake narrow pancakes to the end, cool.

Stir wasabi with cream cheese and season with chili flakes. Spread this cream on the pancakes, top with salmon and roll up.

Spread both ends with wasabi cream, place serrano ham on top, place roulade on top and roll up. Place the roulades in the refrigerator to chill for two to three hours, but it is best to let them rest in the refrigerator for one night.

Rinse frisé tips well and drain. Form a nest in a deep dish, cut the roulade into slices and place two slices in each nest. Chop radish sprouts and sprinkle all around the edge of the nest.
