For the fish in apple curry sauce, first rinse the fish under cold water. Dry with household paper or a clean kitchen towel. Drizzle with juice of one lemon and leave for 15 minutes.

Peel the onion, dice finely. Wash, core (do not peel!) and slice two apples. Heat butter in an ovenproof saucepan. Fry the peeled, diced onion in it until translucent and brown the apples all around. Sprinkle with salt, pepper and a pinch of sugar. Season well with curry.

Season fish lightly with salt and pepper, place in crockpot. Dust with flour. Pour white wine. Place in the heated oven on the middle shelf. Steam for 10 minutes at 200 °C. In the meantime, remove the skin from the last apple, halve, core and cut into narrow wedges. Steam in hot butter for just under 5 minutes until al dente. Set aside.

Remove fish in apple curry sauce from heat. Stir brandy into sauce. Arrange in ovenproof saucepan. Place steamed apple slices all around.
