For the candied violets, stir and heat the sugar and water.

Slowly boil the syrup mixture. Rinse the violet blossoms and place them one by one in the syrup, turn them briefly on the other side and place them on a board. If necessary, dip them a second time in the syrup. Allow the flowers to dry.

Keep the candied violets dry in a tin (metal, not plastic).
