For the coconut blitz cake, mix all ingredients with a hand mixer for about 10-15 seconds until a homogeneous mass is formed.
Pour into a greased tart pan (26 cm ø) and bake at 180 °C for 45 minutes.
Serve the coconut lightning cake sprinkled with powdered sugar.
Preparation Tip:
When baking the coconut flash cake, make sure that it does not get too brown. If necessary, cover the cake with aluminum foil for the last quarter of an hour.
