For the poppy seed roll, beat eggs with sugar until thick and creamy, add vanilla sugar and salt. Stir in flour and poppy seeds. Spread the dough on a baking tray lined with baking paper and bake at 200 °C for 15 minutes.
Turn out immediately and remove the paper.
As soon as the baked poppy seed dough has cooled down a bit, spread with currant jam, fill with whipped cream and roll up the poppy seed roll.
