For the poppy seed parfait, first beat the sugar and egg yolks over a bain-marie until creamy. Then chill.
In the meantime, whip the whipped cream until stiff. Once the mixture has cooled, stir in the poppy seeds and whipped cream. Line a terrine mold (if you don’t have one, you can use a loaf pan) with plastic wrap. Pour the mixture into it and freeze. It takes about 3-4 hours until the poppy seed parfait is completely frozen.
