For the spaetzle, make a smooth dough with eggs, flour, salt and a little milk or water. Let it rest for 10 minutes. Then put a small amount at a time into the spaetzle slicer or scrape from a board into boiling salted water. When the spaetzle rise to the surface, remove with a slotted spoon. Drain briefly in a colander.
Now serve the spaetzle with sugo or with ragout-like dishes such as goulash.
Preparation Tip:
You can also make spaetzle from whole wheat flour!
