Spaetzle dough:


For the spaetzle with cheese, mix all ingredients to a smooth dough.

Let the dough stand for about 1/2 hour. Bring a large enough pot of salted water to a boil and press the spaetzle into the boiling water in batches using a spaetzle strainer.

As soon as they rise to the top, lift them out with a ladle and drain. Put the cooked spaetzle into a buttered ovenproof pot.

Add the cheese and finally sprinkle another layer of grated cheese over the spaetzle. Bake in the preheated oven (200 degrees) for about 25 minutes.

Sprinkle the spaetzle with cheese with freshly chopped chives and serve while still in the pan or pot.

Spaetzle with cheese goes well with a fresh green salad.
