Remove the calyxes from the tomatoes. Cut the fruits in half, melt them in hot oil in a soup pot, adding the coarsely chopped garlic, season with salt and season with pepper. Add the herb stalks – pluck off half of the leaves and put them aside – together with the bread to the tomatoes. Pour enough water to cover everything together flat. Simmer gently for about 20 minutes. Taste, take out the herb stems and the tomato skins, mix in the remaining kitchen herbs coarsely chopped instead. Serve drizzled with a drizzle of fresh olive oil.
