For the dough, quickly knead together whole wheat flour with finely chopped butter, honey and salt until smooth. Line a greased cake springform pan with it, raise a rim and place dough in the pan to cool for about half an hour. For the cream, separate eggs and stir egg yolks with honey, curd cheese and sour lemon zest, whipped cream, vanilla and juice of one lemon. Whip the egg whites until stiff and fold into the curd cream. Cut peaches in half, remove seeds and spread evenly on the dough. Pour curd mixture on top and bake cake at 180-200 °C for 50-60 min.

If the cake gets too dark, cover with aluminum foil after 40 min.
