Brown the breadcrumbs in butter or light butter, mix with the sifted curd cheese, sugar, egg yolks, grated lemon zest and grated almonds or raisins. Loosely fold in the stiffly beaten snow. Pour the mixture into a greased pudding mold sprinkled with breadcrumbs and place in a water bath for about an hour. Turn out and serve with fruit juice or compote. Fill the mold only about three quarters full. Before turning out, carefully loosen the top edges of the pudding.
