For the mashed potatoes, peel, wash and cut the potatoes into large pieces. Cook the potatoes in salted water over medium heat, strain and press through the potato ricer while still hot.

Bring milk to a boil and add to the pressed potatoes with pieces of butter. Whisk for about 1 minute, then season with salt, some pepper and a pinch of nutmeg.

Whip the mashed potatoes again vigorously and serve.
