For the Space Hedgehog, first mix butter, vanilla sugar and sugar with a mixer. Add eggs and lemon flavoring and beat until fluffy. Mix flour and baking powder, add milk and mix. The dough should fall loosely from the spoon.
Pour the batter into 5 bowls. One will not be colored. Color the other 4 either as rainbows or in one color as gradient colors. Grease the baking dishes.
Pour each color into one baking dish at a time. Bake at 190 degrees for about 45 minutes.
For the vanilla syrup, bring sugar, water and vanilla sugar to a boil in a saucepan. Simmer for 10 minutes and then let cool.
For the meringue, heat the egg whites, sugar and vanilla sugar in a heatproof bowl over a gently simmering water bath, stirring constantly with a whisk, until the sugar crystals melt, about 60 degrees.
Remove the bowl from the water bath and whip the mixture with a hand mixer or in a food processor until it has cooled and formed a stiff meringue.
This may take up to 10 minutes.
To assemble the cake, place the first pastry layer on a cake plate, starting with either the uncolored or the most vibrantly colored layer, as desired.
Spread first with vanilla syrup and then with a thin layer of meringue. Continue in this way until all the bases have been used. Now cover the cake with a thin layer of meringue and let it set in the refrigerator for 10-15 minutes
Preparation Tip:
You can also spread any jam between each cake instead of the thin layer of meringue and then place the cakes on top of each other.
