Instructions:

Mix millet, milk and egg until smooth, season with salt, pepper and nutmeg and leave to swell for half an hour.

Finely chop the basil, crush the garlic clove, mix and then add feta cheese and a little bit of olive oil. Season with salt and freshly ground pepper.

Make two pancakes of the same size for each person and fry them in a non-stick frying pan with a little bit of clarified butter until they are golden brown on both sides.

Sauté the spinach with the shallots, season with salt, pepper and nutmeg and extinguish with the whipped cream.

Top two pancakes with spinach and the marinated feta cheese and cover with the remaining pancakes.
