For the carrot cake, first grease a springform pan (26 cm diameter) or a loaf pan or line with baking paper. Preheat the oven to 200 °C.

Mix sugar and butter. Mix eggs until creamy and stir in. Mix in cloves, cardamom, cinnamon, almonds, salt, carrots and rum.

Sift flour and baking powder and quickly fold in. Pour the batter into the prepared pan and bake for about 60 minutes.

Serve the carrot cake sprinkled with powdered sugar.

Preparation Tip:

The carrot cake also goes great with a cream cheese topping or sugar glaze.
