Scrub oranges in hot water.
Divide the peel with a sharp kitchen knife into 6 wedges and then remove the peel from the oranges. Use the flesh for, for example, lettuce. Cut the peel into long strips of 1 cm width and blanch these strips in boiling water for 4 minutes.
Make a syrup with sugar and water and simmer the orange strips for 1 hour and 10 minutes on a very moderate low flame.
Then drain the strips well for 2 hours and roll them in fine granulated sugar.
