For the quince cake, beat eggs, vanilla sugar and sugar until foamy. Bring butter and milk to a boil and add hot to egg-sugar mixture. Fold in flour and baking powder.

Add quince jelly and schnapps. Line a baking tray with baking paper and pour in the batter. Cut the quinces into wedges and cover the dough with them. Bake for 25 – 30 minutes at approx. 200° C.

After cooling, add icing or powdered sugar on top. (There is also a teaspoon of schnapps in the icing).

Preparation Tip:

If you don't want to use liquor, you can make the sugar glaze for the quince cake without alcohol.
