For the cupcakes with amaretti, preheat the oven to 180°C degrees. Beat the eggs, butter, sugar and vanilla sugar until fluffy. Then fold in the flour and baking powder mixture. Finally, put the amaretti in a freezer bag and beat with a pasta walker until small. Then fold the amaretti crumbs into the batter.
Pour the batter into a muffin or cupcake tin lined with paper cups and bake for about 30 minutes at 180°C degrees.
For the cream, crush amaretti as above. Mix together the mascarpone, cream cheese and powdered sugar. Carefully fold in the amaretti and the raspberries. If desired, save a few nice raspberries for decoration. Spoon the cream onto the cooled cupcakes with amaretti.
Preparation Tip:
The topping for the cupcakes with amaretti can be varied in many different ways. For example, instead of raspberries, try adding orange fillets to the topping. This gives the cupcake a wonderfully fresh note.
