Put spelt flour, baking powder and cocoa powder in a suitable bowl and mix well. Beat butter until creamy, fold in honey and egg.

Add cinnamon and salt. Add flour and cocoa mixture by tablespoonfuls to the butter mixture and knead with the dough hook of a hand mixer until a firm dough is formed. Preheat oven to 180 °C and line two baking sheets with baking parchment or grease well if necessary.

Roll out the dough on a floured work surface to a thickness of about 0.5 cm and cut out cookies with star molds. Mix egg yolk and whipped cream. Place the cookies on the baking sheets, brush with the egg yolk and cream mixture and bake at 180 degrees for about 10 minutes.

Info: You can of course use other cookie cutters. Depending on the size of the cookie cutters, the mass of the cookies will of course vary.

Tip: Feel free to use better chocolate – the more delicious the result!
