For the chocolate apricot cake, wash, dry and quarter the apricots. Cream butter, sugar, vanilla sugar and melted chocolate. Gradually stir in the yolks and rum.

Sift the flour with the baking powder, beat the egg whites until stiff and fold into the yolk mixture carefully, alternating with the flour.

Place baking paper in a cake tin, fill in the mixture, cover with apricots and bake at 180 °C top and bottom heat for approx. 50 minutes.

Preparation Tip:

Take all ingredients out of the refrigerator in time, so that everything has pretty much the same temperature. The chocolate apricot cake can be sprinkled with almond flakes as desired.
