Sausage meat is the quantity from which bratwurst is made. In Bavaria, sausage meat is often used as a soup ingredient. One makes from it small Brätknoedel. Boil down beef broth on low flame. Mix the sausage meat with lemon peel and egg. Press the mixture into the clear soup with a spatula. Or cut off with a teaspoon. Cook for 5 minutes. The spaetzle are ready when they float on top.
