For saltimbocca with cheese, slice the St. Albray. Cut the veal fillets in halves, if desired, and salt and pepper both sides. Top the fillets with a sage leaf and a slice of cheese. Then wrap with a sheet of prosciutto and secure with a skewer.
Grill for 10-15 minutes until the cheese is melted and the prosciutto is nicely crisped. As a side dish to Saltimbocca with cheese we recommend ribbon noodles, fried potatoes or just fresh baguette.
