Beat the egg whites until stiff, then fold in the yolks. Then add the flour, season with salt and nutmeg and fold in the kitchen herbs. Put everything into a cake springform pan (26 cm ø) lined with parchment paper and bake for about 10-15 minutes at 180 degrees in the oven. After cooling, you can either cut rhombuses or cut out figures with ramekins.
A vegetable or beef broth is suitable as soup.
