For souvlaki, cut the lamb into small cubes, remove tendons and fat beforehand.

Peel onions and garlic and chop very finely. Finely weigh the herbs. Mix all the ingredients and leave in a container with a closed lid in the refrigerator for a day. Then put the meat on wooden skewers and grill quickly over good embers.
