Boil potatoes in their skins until soft. Peel while still hot and strain. Allow to cool briefly. Beat egg whites until stiff and add to potato mixture with butter. Season with salt and nutmeg. Draw four decorative sheets on baking paper and spread the mixture thinly on them. Smooth with a spatula. Sprinkle with sesame seeds. Bake in preheated oven at 180°C for about 6 minutes until golden brown.
