For the cherry crumble cake, prepare a brioche dough (yeast dough) as desired. Grease a large, deep baking tray with a little butter and spread the dough on it, either roll it out beforehand or press it in immediately with both hands.

Put the cherries in a sieve and shake them a bit so they are not too wet, put them on the dough. Knead crumbles from cold butter, cinnamon, flour, hazelnuts and sugar.

This is best done with cold hands or even better, in a food processor. Spread the crumble over the cherries, preheat the oven to 170 degrees and bake the sheet cake for about 40 minutes.

The cherry crumble cake can also be made with grated almonds.
