Rinse the goose giblets with cold water, chop the neck and wings. Peel and chop the onions, garlic, carrots and celery.
Heat the oil in a pot and fry the onions until golden. Add the goose giblets and fry. Deglaze with lemon juice and pour in chicken soup. Cover and simmer gently for 1 hour, then add the herbs, spices and vegetables. Continue to simmer for another 15 minutes. Stir some cream into the soup and thicken with flour (stir flour smooth with a little water beforehand).
Season the soup with goose giblets with salt and pepper and serve with chopped parsley.
Preparation Tip:
You can put the herbs and spices for the soup with goose giblets in a tea filter or spice bag and hang it in the soup.
