For the pumpkin slices in Parmesan breadcrumb crust with sour cream dip, salt and pepper the pumpkin slices. Whisk the egg in a bowl, mix breadcrumbs with parmesan.
Pull the pumpkin slices through the egg and coat them in the breadcrumb and parmesan mixture. Heat oil in a skillet and fry squash slices until crisp.
