Perhaps your new favorite bean dish:

1. finely chop the onion. Clean the outside and inside of the bell bell pepper, remove the white fruit skins and chop into small cubes. Clean the mushrooms and chop them coarsely.

2. melt the butter in a frying pan, sauté the onion, mushrooms and peppers for about 5 minutes until soft, without letting them take color, season with salt and freshly ground pepper.

Make a pocket on the flat side of each cutlet and place the vegetable mixture inside. Pin the opening shut with a roulade needle or sew up with a few stitches with spaghetti.

Brush the chops with the oil and let them sit for a few minutes while the dry frying pan is heated on a low flame.

Roast the chops in the hot frying pan for 7 to 8 minutes on each side, then season with salt, season with pepper.

Serve with fried potatoes and bean pods.
