For the sauerkraut stew, dice the selchkarree and peeled onions and sauté in hot oil in a large saucepan. Break up the sauerkraut with a fork, add and stir-fry briefly. Season with bay leaf spice, peppercorns, juniper berries and caraway seeds.

Then add the clear soup and cook with the lid closed for about 40 minutes.

In the meantime, peel the potatoes and cut them into 2 cm cubes. Add them to the stew about 15 minutes before the end of the cooking time and let them cook.

Serve the sauerkraut stew with salt and freshly ground pepper to taste.

Preparation Tip:

Refine the sauerkraut stew with a blob of sour cream. Instead of selchkarree, a spicy bacon or debreziner also looks particularly good in this stew.
