For the spring “Homemade Curry” with cod, prepare the curry powder. Crush all ingredients well in a mortar. Sauté briefly in a saucepan without oil to release the essential oils from the spices.

Peel the carrots and the shallots and cut them into small cubes, strips or pieces. Quarter the radishes, cut the rhubarb and celery into small cubes. Halve the snow peas, cut the green onion into fine rings. Cut the fish into large cubes.

Sauté the shallots in a little oil. Add the rest of the vegetables except the peas and add 3 tablespoons of curry powder, deglaze with the water or soup and simmer for about 5-10 minutes. Then add the fish and yogurt, and simmer for another 5 minutes. Season to taste with a little salt and pepper.

Arrange the spring “Homemade Curry” with cod in a deep plate and garnish with some basil or cilantro.

Preparation Tip:

You can also make the curry without cod. Then serve it with basmati rice.
