For the pretzel dumplings, cut the pretzel into cubes and place in a large enough bowl.
Dice a shallot and the bacon and sweat them in a frying pan until golden.
Add the mixture to the chopped pretzels and pour the hot milk over them.
Soak for about 5-10 minutes, season the quantity with salt, pepper and a little nutmeg.
Then twist off uniform dumplings and cook them in boiling salted water.

If you like, you can also make the pretzel dumplings without bacon cubes.
