Rinse the grapes and pluck them from the stalk. Bring to a boil in a saucepan with the butter, white wine, sugar and vanilla pulp and steam for 2 min until soft. Pour grapes over a sieve and collect the gravy. Divide grapes evenly into four glasses. Place in refrigerator or freezer.

Mix pudding powder with 5 tbsp cold water according to package directions until smooth. Stir into warm gravy and bring to a boil over medium heat. Add orange liqueur and stir for 1 minute. Pour into a large enough bowl and place in a cold water bath and stir several times until cooled but not set.

Meanwhile, whip the whipping cream until stiff. Fold into the cream and spread evenly over the grapes. Refrigerate until ready to serve, then decorate with the grated chocolate.
