Instructions:

First mix the minced meat with egg and breadcrumbs. Season with salt, pepper, chili and paprika powder.

Form walnut-sized balls and fry in olive oil all around. Remove from heat.

Cut zucchini in half lengthwise and slice. Roughly dice carrots and tomatoes. Finely dice celeriac and onions.

Saute onions until translucent, add carrots and celery. Deglaze with soup, bring to a boil, cook over medium heat for about 8 minutes.

Add the tomatoes, peas, marjoram, lovage and the meatballs and let simmer for about 5 minutes. Add the chives and parsley to taste and season the soup.

Serve the vegetable soup with the meatballs.

Preparation Tip:

You can also use any other vegetables, depending on taste and availability. If someone does not prepare the soup itself, you can use vegetable soup cubes.
