For the pancake casserole, first prepare the pancakes. For this, mix the eggs, milk, flour into a smooth batter. Heat some oil or butter in a pan, pour the batter in portions into the pan and fry the pancakes.

For the filling, separate eggs and beat egg whites with granulated sugar until stiff. Beat yolks, curd and powdered sugar until creamy, add sour cream and mix well.

Carefully fold in the snow, mix in the raisins as desired. Place pancakes on top and spread with part of the filling.

Roll up the pancakes and place them in a greased baking dish. Spread the remaining filling on the pancakes and bake in the oven at 180 °C top/bottom heat for approx. 40-50 minutes.

Arrange the pancake casserole and serve.

Preparation Tip:

If you don't like raisins, make the pancake casserole without them. Sprinkle the pancake casserole as desired with sliced almonds, chocolate shavings, etc. or garnish with a leaf of mint.
