Instructions:

For the strawberry vanilla heart, butter a heart mold. Preheat the oven to 180 °C. For the pastry, whip the egg yolks, sugar, salt, vanilla sugar and lemon zest until creamy. Beat until stiff and clear.

Fold the snow into the mixture, then fold the flour into the yolk mixture. Finally, fold in the melted butter.

Pour the mixture into the prepared baking pan and bake in the preheated oven on the middle rack for about 20 minutes. Remove from the pan and let cool.

For the vanilla cream, whip up the Qimiq Vanilla. Whip the Qimiq Whip Vanilla and the base separately. Mix the Qimiq Vanilla with the sugar, Bourbon vanilla sugar and a dash of lemon juice, fold in the two Qimiq Whip and season to taste.

Cut the cooled heart 1x in half crosswise. Spread a thin layer of strawberry jam on one base and place back in the mold. Place the strawberries tightly on top.

Pour a large part of the cream on the strawberries. Then place the second part on top and press down lightly. Spread the rest of the cream in a wavy pattern. Refrigerate the cake preferably overnight.

Remove from the edge of the springform pan with a knife and decorate with chocolate strawberries.
