Strawberry Butter

For the strawberry butter, carefully wash the strawberries, remove the green and puree in a stand mixer.

Beat the butter until fluffy, add the lemon juice and honey and season with pepper.

Mix the buttercream and strawberry puree well.

The strawberry butter is a great spread for fresh pastries or for brioche.

Preparation Tip:

Try adding a few splashes of balsamic vinegar to the strawberry butter - heavenly flavor!
