Steckerlfische are easy to prepare on the garden grill.

The fish are first gutted, cleaned well, scaled if necessary, washed and patted dry with kitchen paper. Then cup them with a very sharp knife, making incisions on both sides at intervals of about 2 mm.

Salt the fish well inside and out, letting the salt soak in for about 1/2 to 1 hour. Then put them on the wooden skewers.

Then slowly fry the fish over the charcoal embers enriched with green wood until crispy and crunchy. The green wood, which produces a lot of smoke, is needed because the Steckerlfische are to be both grilled and smoked.

Fry the potatoes wrapped in aluminum foil and serve them well salted together with the Steckerlfische.
