In a pot, bring plenty of salted water to a boil and cook the spaghetti in it “al dente”.

Meanwhile, heat the olive oil in a frying pan. Gently sauté the garlic in it (it should not turn brown) and add salt. Add the chopped chili pepper and parsley.

Lift the al dente cooked spaghetti from the cooking water and mix with the olive oil garlic sugo. Season to taste with freshly ground pepper.

Arrange spaghetti aglio e olio in preheated, deep plates and sprinkle with freshly shaved cheese before serving.

Preparation Tip:

Spaghetti aglio e olio can of course also be prepared with other types of pasta such as tagliatelle, penne, farfalle, etc.. Just use the variety that you have at home.
