Clean, rinse and chop the leek into rings. Melt 30 g butter in a shallow dish at 600 W for 1 1/2 min.

Add the leek, cover with microwave foil and sauté at 600 W for 3 min. Season with salt and pepper.

Season the salmon fillet with salt, place on top of the leeks and drizzle with 1 tbsp Noilly Prat. Cover with foil and sauté at 600 W for 3 min, set aside with lid closed.

Mix the egg yolks with the remaining Noilly juice of one lemon, Prat, fish stock and a tiny bit of salt. Heat at 600 W twice for 30 seconds each time. In between, and especially afterwards, whisk thoroughly.

Melt the remaining butter in the measuring cup at 600 W for 1 1/2 min and gradually fold it into the egg yolk mixture. Season to taste and put on the table sprinkled with the chopped parsley with the salmon fillet and leek. It goes well with parsley potatoes.
