For the potato strudel, stir sugar in a saucepan on the stove until warm. Add yolks, fold in grated potatoes and beaten egg whites.

Process strudel dough according to package directions. Spread the potato mixture on the strudel dough, roll it up and place it on a baking tray lined with baking paper, brush with melted butter and sprinkle with sugar.

Bake in the oven at medium heat until it has a nice golden color.
