Instructions:

To make the pork skewers satay, first cut the pork tenderloin into bite-sized pieces, place in a medium bowl and add the peanut oil and soy sauce. Place in the refrigerator for 2 hours to marinate.

Heat the coconut milk in a small saucepan with the curry paste and cook for a few minutes. Then stir in the honey, peanut butter and soy sauce.

Remove from heat and let cool. Add mayonnaise and lime juice and mix the satay sauce well.

Thread the pork onto 8 medium skewers. Preheat a grill pan or grill.

Grill the pork skewers in the pan or on the grill for 3-4 minutes on each side.

Brush the pork with a little satay sauce and grill for another 30 seconds on each side, or until the sauce caramelizes.

Serve the pork skewers satay together with the remaining satay sauce and lime wedges.
