For the poppy seed rings, prepare the short pastry as described in the basic recipe. Preheat the oven to 170° C hot air.

Roll out the dough on a work surface sprinkled with flour. Cut out cookie slices. Cut a hole in the center of half of the slices. Place all slices on a baking sheet lined with parchment paper.

Fill a piping bag with the poppy seed filling and pipe a ring around the cookies with the hole. Bake for about 15 minutes.

When cool, stick two cookies together with apricot jam. Alternatively, fill the cookie hole with sugar snow.
