For the peach melba cream, cut the vanilla bean lengthwise and scrape out the pulp. Stir vanilla pulp, powdered sugar, vanilla sugar and mascarpone until smooth.

Whip the cream until stiff and mix into the mascarpone cream. Drain the peaches.

Puree half of the peaches, cut the other half into small pieces. Mix the peaches into the cream and chill the peach melba cream for approx. 20 minutes.

Preparation Tip:

Prepare the peach melba cream in summer with fresh very ripe peaches.
