Instructions:

A great cake recipe for any occasion:

Stir flour with milk, egg (1) and salt, rest 1/2 hour. Using a tiny bit of clarified butter, bake 6 narrow pancakes per cake until brown.

Beat yolks (2) with sugar (1), grated lemon peel and juice of one lemon until creamy. Stir in layered cheese and cornstarch (maizena). Whip the snow (2) and fold it in.

Drain the apricots well, cut into fine wedges, set aside a few for decoration.

Preheat the electric stove to 200 degrees. Grease a cake springform pan with a diameter of 24 cm for each cake. Place layers of pancakes, cheese mixture and apricots in it. Cover with 2 tbsp. layered cheese cream. Bake for 45 minutes (gas mark 3). Next sprinkle with sugar (2) and brown briefly under the broiler.

Make custard according to instructions with milk and sugar. Rest the pancake for 10 min before cutting. Portion, serve with vanilla sauce and apricots.
