Have fun preparing this mushroom dish!

Clean the mushrooms and cut them coarsely. Heat oil in a frying pan, roast mushrooms in it for 4 to 5 min. Add onions and roast for 2 to 3 min. Season with salt and pepper and nutmeg (freshly grated) and set aside. Cut chives into fine rolls.

Separate eggs. Stir yolks, cream yogurt and milk. Fold in flour and chives. Whip egg whites and salt until stiff and fold into yolk cream.

Grease a frying pan (approx. 26 cm ø) with a little butter. Pour in the dough, spread it smoothly and sprinkle with the mushrooms and the Parmesan cheese. Bake in the heated oven on the 2nd rack from the bottom at 200 °C (convection oven not suitable) for about 15 min. Take out of the oven, pluck into pieces and bring to the table.

Tip: The Schmarren will be even fluffier and finer if you fry it again in a little butter after picking.
